Hi all, I am having trouble hearing first crack on my Home Ikawa. Any tips to help me hear it clearly?
Having the same problem. Three ideas: 1. Somebody at Ikawa told me to wait for multiple rolling cracks but, if any, it comes very late. 2. A roaster I trained with calls first crack at the first pop on his Ikawa. 3. If you have a profile curve, or can look at one online, first crack seems to come around 390-400F when the curve changes angle.
According to Scott Rao’s three commandment, you should target first crack about 75-80% of the way through the roast time. I know we aren’t bound by the same rules as a large bean mass, but as a noob I believe I can learn faster if I mirror commercial profiles for now.
